BUTTERSCOTCH PIE FILLING
1 cup brown sugar 6 tablespoon flour (rounded) ¼ teaspoon salt 2½ cup milk, or evaporated milk and water 2 egg yolks (two whole eggs if using whipped cream) 3 tablespoon butter or margarine 1 teaspoon vanilla
COMBINE: brown sugar, flour, and salt in the top of a double boiler. Add milk and egg yolk, mixing thoroughly. Place over rapidly boiling water and cook 10 minutes. Remove from heat. Add butter and vanilla. Pour into pie shell and chill. Top with meringue or whipped cream.
Note: Makes an excellent pudding! |
