Yields:  about 50 cookies

½ C. shortening
1 egg, beaten
1 C. flour, sifted
½ tsp. soda
½ tsp. salt
½ C. sugar
½ C. brown sugar
1 tsp. vanilla
1 (12 oz.) pkg. chocolate chips
½ C. shredded (not flaked) coconut

Cream shortening, add sugar gradually and cream thoroughly — beating for at least 2 minutes by the clock.  Add egg and vanilla and mix.

Sift together flour, add salt and soda, and sift again.  Add flour and mix well.  Add chocolate chips and coconut.  Mix.  Place on sheet, 2" apart.  Bake at 375 F., 10-12 minutes.

Note: Do not substitute margarine or butter for shortening.  Cream shortening and sugar for at least 2 minutes by the clock.  The texture of this cookie depends on it.
