COTTAGE CHEESE PATTIES
2 C. (1 lb.) cottage cheese 1½ C. cracker crumbs ¼ C. bread crumbs 2 eggs, unbeaten ¼ C. celery, chopped ¼ C. green pepper, chopped (optional) ¼ C. onion, chopped ½ C. nuts, chopped ½ tsp. salt
Place all ingredients in large mixing bowl. Beat at high speed for 2 minutes. Shape into balls, roll in cracker crumbs, and fry -- or shape into patties, dredge in crumbs, and fry until just golden brown..
Note: 1) For casserole: cover fried patties with 1 can mushroom soup mixed with 1/2 C. milk. Bake at 350 F. for 30 minutes or until brown.
2) Serve patties with hot mushroom-soup gravy, leftover beef gravy, Hidden Valley Ranch buttermilk dressing (the mix, not the bottled stuff), ketchup, or (yup) jalapeño jelly! |
