VEGEBURGER HASH
1 C. diced potatoes (with peel left on) 1 small onion, chopped 1 carrot, sliced ½ C. fresh green beans, cut in 1" lengths 1-2 cloves minced garlic Salt to taste ½ C. diced turnip, rutabaga, or cabbage OR ½ C. sliced broccoli stems, or small broccoli or cauliflower florets 1 rib sliced celery 1 can Worthington Vegetarian Burger 1 tsp. sage or poultry seasoning 1 T. Worcestershire sauce 1-1½ C. cooked, small but chunky pasta (Farfalle, Rotini, Radiatore, etc.) ½ C. fresh mushrooms, sliced ½ C. snow peas ½ C. sliced radishes ½ can sliced water chestnuts, drained Oil for frying
Prepare vegetables first.
Heat a very large (at least 12") skillet over medium heat (or slightly less). Add potatoes, onion, carrot, green beans, and garlic. Salt lightly. Cover and cook 5 minutes.
Add turnip, rutabaga, broccoli, or cauliflower (your choice of one only), and celery. Cover again and cook 4-5 minutes.
Add Worthington Vegetarian Burger, broken apart, and sage or poultry seasoning. Add oil if ingredients seem too dry. Cover again and cook 4-5 minutes.
Add Pasta and Worcestershire sauce. Stir together. Cook uncovered for 4-5 minutes.
Add remaining ingredients on top of skillet mixture. Cover and steam for 4-5 minutes.
Stir all ingredients together before serving with crusty French bread or whole wheat rolls. Serve plain or top with shredded cheese, chopped walnuts, sunflower seeds, buttermilk or sour cream ranch dressing, ketchup, hot-pepper sauce, or even mayonnaise -- whatever you like.
Note 1) Vegeburger Hash can be prepared without oil by using a non-stick skillet and adding small amounts of broth (preferably chicken-flavored) throughout the cooking process. Keep the ingredients moist enough to steam without sticking, but dry enough that the dish won't be wet when served. Do not expect the ingredients to brown without oil.
2) Choose just one of the cruciferous vegetable family. Their flavor is too strong and, if added in too large a quantity, will overwhelm the other flavors of this dish.
3) This makes a LOT of hash. If it's too much, use only half a can of burger. If you want to extend it for company, add more veggies or pasta. |
