1 package lemon gelatine
1 cup crushed pineapple, drained
1 cup purple grapes, seeded
   
OR
1 cup maraschino cherries
1/2 cup chopped pecans
4 tablespoons powdered sugar
1 pint whipping cream

Prepare gelatine according to package instructions, but chill only until partially set.  Whip cream and add powdered sugar.  Add to gelatine with remaining ingredients.  Refrigerate until ready to serve.

My mother always used the purple grapes, when I was a child.  I'm not sure what variety they were -- perhaps Tokay.  They were very large, dark, tasty -- but also had large, bitter seeds.  We don't even see such grapes in the supermarkets in our part of the U.S., nowadays, except for a couple of weeks during the summer.  For that reason, she switched to maraschino cherries long ago, and we like them much better.

Two tips:  1) Don't skimp on the cherries -- a "perfumey" brand of cherries will ruin this nice salad, so choose them wisely, and 2) Don't try to substitute another type of common table grape (such as Red Flame) in this recipe -- it's just not acceptable.
