Note:
1) These recipes are for making your own mixes to store and have on hand as you need them or to pack in an interesting container and give as a gift.
2) Always label mix storage containers.
3) All herbs should be dried unless otherwise specified.
CHILI SEASONING MIX

Yield:  About 1/4 cup

2 T. chili powder
1 T. seasoned salt
2 tsp. cumin, ground
1 tsp. oregano, crushed
1 tsp. salt
1 tsp. onion powder
1/2 tsp. garlic powder

Mix all ingredients together.  Store in a small, airtight glass or plastic container in a cool, dry place.  Do not store in metal.
HERB SEASONING MIX -- POULTRY

Yield:  About 1/3 cup

2 T. parsley flakes
1 T. oregano
1 T. marjoram
1 T. thyme
1 T. rosemary, crushed
1 T. celery seed, crushed
1 T. salt
1 T. ginger
1 tsp. white pepper
1 tsp. sage

Mix all ingredients together.  Store in an airtight container.  Use on chicken or as seasoning for stuffing or salad dressing.
HERB SEASONING MIX -- FISH

Yield:  About 1/3 cup

2 T. parsley flakes
1 T. dried grated lemon rind
1 T. celery seed
1 T. savory
1 T. thyme
1 T. marjoram
1 tsp. dried chives
1 bay leaf, crushed

Mix all ingredients together.  Store in an airtight container.  Use on fish or as a seasoning for salad dressing.
ITALIAN HERB BLEND

1/3 C. leaf oregano
1/3 C. leaf basil
2 T. leaf sage
2 T. garlic powder
2 T. lemon pepper
1 jar (3.25 oz.) seasoned salt.

Combine all ingredients in a small bowl and stir until well *blended.  Store in an airtight container in a cool, dry place.
ITALIAN HERB MIX (My mom uses this mix for her excellent vegetarian lasagna.)

3 T. leaf oregano
3 T. leaf marjoram
1 T. leaf thyme
1 T. leaf sage
3 T. leaf savory
3 T. leaf basil
2 T. leaf rosemary, crumbled.

Gently stir all ingredients together.  Store in a tightly sealed container.

Note:  I use this mix for Garlic-Bread Zucchini.)
MEDITERRANEAN HERB SEASONING BLEND

1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. ground cumin
1 tsp. ground coriander
1/8 tsp. ground red pepper
1 tsp. oregano, crumbled
1/2 tsp. thyme, crumbled

A nice seasoning for vegetables, tomatoes, rice, pasta, or chicken.
MEXICAN HERB SEASONING BLEND

1/2 tsp. garlic powder
1/2 tsp. onion powder
1 tsp. ground cumin
1 tsp. ground coriander
1/4 tsp. ground red pepper
1/2 tsp. chili powder
1/2 tsp. cilantro

Use to season corn, rice, beans, chicken, or beef.
SALAD SEASONING MIX

Yield:  About 1/3 cup

2 T. parsley flakes
1 T. seasoned salt
1 T. marjoram
1 T. basil
1 T. dried chives
1 T. celery seed
1 T. dill weed
1 tsp. seasoned pepper

Mix all ingredients together.  Store in an airtight container.  Sprinkle on salads or use in salad dressings.

Note:  Interesting addition to eggs.
SPAGHETTI SAUCE SEASONING MIX

Yield:  about 6 tablespoons

2 T. Italian seasoning or mixed Italian herbs
2 tsp. garlic powder
2 tsp. seasoned salt2 tsp. salt
2 tsp. monosodium glutamate
1 tsp. pepper

Mix all ingredients together.  Store in an airtight container in a cool, dry place.
THAI HERB SEASONING BLEND

1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. ground cumin
1 tsp. ground coriander
1/4 tsp. ground red pepper
1/2 tsp. ground ginger
1/8 tsp. ground cinnamon

Try this seasoning mix in oriental noodles, sauces, stir-fry, and vegetable dishes.
