(One of my favorite dishes.  We have even had these for Christmas dinner.)

½ C. white rice, uncooked
1 lb. ground beef
1 small onion, finely chopped
2 T. chopped green pepper (optional)
1 tsp. salt
1/8 tsp. pepper
1/8 tsp. thyme
   OR
1/8 tsp. marjoram
2 T. oil
2 C. tomato juice
   OR
2 cans tomato sauce with just enough water to rinse cans

Combine first 7 ingredients and mix thoroughly.  Shape into large balls (about 10).  Brown balls in hot oil.  Pour tomato jsauce over balls, bring to a boil, cover with a tight lid, reduce heat, and simmer for about 1½ hours (checking occasionally to make sure there's enough liquid to prevent scorching), or until rice is tender.

Note: The original recipe called for thyme, but my mother has always used marjoram, and I prefer that.
