For: Use:
1 whole egg 2 egg yolks + 1 T. water
1 whole egg 2 egg yolks (in custards, etc.)
1 C. sour milk or buttermilk 1 T. lemon juice or vinegar added to sweet milk (to total 1 C), let stand 5 minutes before using.
1 C. fresh, sweet milk 1/2 C. evaporated milk + 1/2 C. water
1 C. fresh, sweet milk powdered milk + water (follow package directions)
1 C. fresh, sweet milk 1 C. sour milk or buttermilk + 1/2 tsp. baking soda (if baking powder is called for in same recipe, decrease by 2 tsp.)
1 T. cornstarch (for thickening) 2 T. flour (approximately)
1 C. honey 3/4 C. sugar + 1/4 C. liquid
1 C. canned tomatoes about 1 C. cut-up, fresh tomatoes, simmered for 10 minutes
1 square unsweetened chocolate 3 T. cocoa + 1 T. shortening
1 C. corn syrup 1 C. sugar + 1/4 C. water (or other liquid called for in recipe)
1 C. butter 1 C. margarine
1 C. butter 7/8 C. solid vegetable shortening + 1/2 tsp. salt
1 C. cake flour 7/8 C. all-purpose flour
1 C. light cream 3 T. butter + 7/8 C. milk
1 C. heavy cream 1/3 C. butter + 3/4 C. milk
1 tsp. baking powder 1/2 tsp. baking soda + 1 C. sour milk
1 tsp. double-acting baking powder 2 tsp. quick-acting baking powder
1/4 C. fresh herbs/spices 1 T. dried herbs/spices
1 tsp. fresh herbs/spices 1/4 tsp. dried herbs/spices
1 C. ketchup 1 C. tomato sauce or mashed, canned tomatoes + 1/4 C. packed brown sugar, 2 T. vinegar, 1/4 tsp. cinnamon, and a dash each ground cloves and allspice
