Back to Recipes index THREE BEAN SALAD

(Common, I know, but still comfort food, when made with Grama's recipe.)

1 can wax beans
1 can green beans
1 can kidney beans
1 can garbanzos
½ C. chopped celery
Onion, thinly sliced, to taste

Cover with Three Bean Salad Dressing (below), cover, refrigerate overnight.  Pour off dressing before serving.

THREE BEAN SALAD DRESSING

½ - ¾ c. lemon juice
½ C. water
1 tsp. salt
1 C. brown sugar

Bring all to a boil.  Cool.  Pour over bean mixture.

Note:  My family has never cared much for vinegar, so this is perfect for us.  However, I will sometimes make mine with equal parts lemon juice and apple cidar vinegar.  If you think the onion is going to be unbearably hot, you can put it into the dressing while the dressing is still very hot.  The heat will be taken out of the onion, but the onion won't be limp.
