Lemon Blueberry Loaf
1 cup sugar
1/2 cup butter
2 eggs
1 1/2 cups flour
1/4 tsp. salt
1 tsp. baking powder
1 tsp. grated lemon rind
1/2 cup milk
1 cup blueberries
topping:
1/4 cup sugar and
the juice from one lemon
cream butter and stir in sugar.
beat in eggs. in another bowl,
combine dry ingredients and
lemon rind. add this mixture
alternately with milk to the
butter mixture. fold in berries.
bake at 350 degrees for 1 hour.
remove from pan and spoon
topping on hot loaf
