Carrot Nut Cake

2 cups flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 cup oil
2 cups sugar
4 eggs
3 cups grated carrots
1 cup chopped walnuts

Sift together the first 5 ingredients.
Add sugar gradually to the oil,
beating well after each addition with
electric mixer at high speed.
Beat eggs until very light.
Gradually beat, a little at a time,
into the oil - sugar mixture.
Continue beating until mixture is
smooth and fluffy. Gradually stir
in the sifted ingredients until thoroughly
combined. Add carrots and nuts,
mix well. Pour into greased pans
and bake at 325 degrees for
60 - 65 mins. or until cakes are
golden brown and the tops
spring back when lightly touched.
