Le Souffle
At The Fort, Makati City
Le Soufle at The Fort has a great Sunday lunch buffet, but recently we found it's also
nice to have lunch there Mondays to Fridays. Around 1 pm, when it's more quiet. You
can then examine more leisurely the artwork on the walls -- an everchanging exhibit of
paintings for sale. Most of Le Souffle's dishes come in small and large portions so you
can order them either as an appetizer or as a main dish. MWF founder Marcia Hamilton
once told me her favorite thing for dinner at Le Souffle is to order two appetizers, no
main dish. That's so she can allow herself to have dessert -- a souffle, of course. And
there's this salad, Tessie Tomas must have loved this one so much they named it after
her. So that's what we had the last time we were there -- one Tessie Tomas salad each
-- mushrooms, grilled prawns, smoked salmon and all. Another dish for you to try is
their panfried goose liver salad. (Beaulah Taguiwalo, January 2004)
