1. Cook the lentils in unsalted water for 45 minutes until
they are soft. When they are cooked, make sure that there is not water
left and mash them.
2. Beat the egg.
3. Add rice, egg (I didn't use the whole egg, save some for
step 6), salt and pepper.
4. Fry the onion until soft and add to the lentil batter.
5. Let the batter cool and form into croquettes (since I
didn't want to fry them, I flattened them).
6. Dip the croquettes into the egg and then roll it around in
the breadcrumbs.
7. Fry the croquettes.
8. Serve warm.
