1. Preheat the oven to 200°C. Place the chicken in a greased pan. Carefully cut a large pocket in each chicken breast. Put approximately ½ tbsp mustard in each pocket. Add salt and pepper.
2. Cut the parma ham into small strips, grate the cheese, and dice the tomatoes. Combine and add to each pocket.
3. Bake for 15-20 minutes or until chicken is completely cooked.
