Fudge - Fondant - Brittles

CANDY   pg 1
Peanut Brittle
2 cups sugar
1/2 cup water
1/4 tsp cream of tartar
Place in heavy pan
Cook without stirring to
Light Crack - 280 deg.
THEN ...
Add to above mixture stirring constantly
Continur cooking to
Hard Crack 300 deg.
2 tablespoon mollasses
2 tablespoon butter
1/2 teaspoon salt
THEN ...
2 cups salted peanuts
1 1/2 teaspoon baking soda
Add to mixture at once
and mix quickly
FINALLY ...
Pour onto well buttered large cookie sheet
Quickly spread thin with greased spatula

When cool - break into pieces

Store in airtight container
I used to make this recipe years ago - it's a good one
