Chicken with white wine and potatoes 4 Pers 3 chicken files 5 medium sized potatoes 1 big or 2 small onions 4 garlic cloves 1 red paprika Ca 200g broccoli 3dl white wine 1 cube of chicken bullion Olive oil Salt Pepper Fresh or dried thyme Start with cutting the chicken files in smaller pieces. Peel and cut the raw potatoes in "boats" Slice the onion and cut garlic in small pieces Rinse the broccoli and divide into small buckets Cut the paprika in pieces Take a big pot, preferably old iron pot and pour in olive oil. Heat up and fry the sliced onion and garlic until soft but not colored. Remove and set aside. Fry the chicken in the oil from the onions and when the chicken starts to get colour add the potatoes. Let fry for 5 min and start adding onion, paprika and broccoli. Here you can also add other vegetables if you wish. For example fresh champignons, mini corn or squash. Let it fry together for a moment and then pour over the wine. Put in the cube of bullion and let it dissolve. You will have to se if you need more fluid but I like to add as little water as possible. I like the wine flavour! Season with salt and pepper. Go easy on the salt though when you use bullion. Cover with a lid and let it alone for as long as it takes until the potatoes are done. When the dish is almost ready add the thyme. Taste! This is a hearty dish and wonderful in the autumn or spring when you can get fresh new vegetables. Serve with a glass of cold beer or the same wine you were using to cook with. Some nice bread is also nice. |
