Jansson's Temptation 4-6 pers 6-8 Medium sized potatoes 2 Large yellow onions 2 Jars of Anchovie or 15-20 anchovie fillets 2 dl Heavy cream Butter Bread crumbs Freshly ground black pepper Peel and grate the potatoes, they should have the shape of small matches, then place them in cold water (so they don't turn color, and so that the starch washes out). If you want it a bit creamier you skip this step. Slice the onions thinly. Grease a casserole, about 15-20 cm. Layer the grated potatoes, onion and anchovies in the dish, starting with potatoes. Depending of the size of the dish you can probably make 2 or 3 layers. Mix the cream with the juice from the anchovie and pour over the dish, then sliced butter, bread crumbs and pepper evenly over the mix. Bake in a 200-220° oven for 40-50 minutes or until golden color and the potatoes are done. Authors note This is a typical Swedish dish that is usually served during Christmas or Easter or even as a late evening snack before your guests leave. It is important that you find the proper anchovies for this dish or you will find it too salty. So, if you are a resident outside of Sweden my advice to you is to go to the nearest IKEA store and have a look in their food departement. They usually have the typical Swedish delicacies. |
