Sweet Potato Boulettes

Ingredients

6 medium sweet potatoes
1/2 tsp salt
1/4 tsp pepper
4 tbsp melted margarine
3 slices fried bacon
parsley

Directions

Cook potatoes until tender, rinse and mash well.  Add salt, pepper and 3 tbsp melted margarine.  When cool enough to handle, form into round balls 2 inches in diameter.  Sprinkle with the chopped bacon, brush with the tbsp melted margarine and brown in a moderate oven, 375* for 12 minutes.  Garnish with parsley.
