Lemon Squares

Ingredients

3/4 cup sifted all purpose flour
1/3 cup confectioners powdered sugar
1/3 cup ground almonds
1/2 cup butter
2 eggs
1 cup sugar
1 tsp grated lemon rind
2 tbsp lemon juice
1/4 tsp salt
1/2 tsp baking powder
3/4 cup flaked coconut

Directions

Blend flour, powdered sugar, almonds and butter in a small bowl.  Press evenly on bottom of an 8x8x2" pan.  Bake in moderate oven 350* for 20 min.  Combine eggs, sugar, lemon rind, juice, baking powder, and salt in small bowl of mixer; beat at medium speed about 3 min or until fluffy.  Stir in coconut; pour over hot crust.  Bake 25 min longer, or until golden brown.  Cool completely on a wire rack.  Cut into 2" squares.
