Pumpkin Roll

Ingredients

2/3 cup pumpkin
2/3 cup flour
1 cup sugar
1 tsp salt
3 eggs
1tsp baking soda
1 tbsp cinnamon
1/2 tsp ginger
1/2 tbsp nutmeg

Directions

Mix all ingredients except flour.  Add it gradually.  Bake on shallow cookie sheet (with sides).  Bake on greased wax paper at 350* for 10 to 12 min.  Cool 10 minutes, roll up in clean dish towel and let set for 10 more minutes.  Unroll and ice.  Reroll and wrap in Reynolds wrap.  ** Keep Frozen**

Icing (Cream Cheese)

Ingredients

1 pkg cream cheese
1 cup powdered sugar
3 tbsp butter
1 tsp vanilla
1/2 cup finely chopped nuts (optional)

Directions

Mix all ingredients until creamy smooth, then add nuts and mix well.  **Nuts should be finely chopped**
