Basic San Francisco Sourdough Starter

Ingredients

3 1/2 cups whole wheat flour
1 tbsp sugar
1 pkg active dry yeast
2 cups warm water

Directions

Combine flour, sugar and undissolved yeast in a large bowl.  Gradually add warm water to the dry ingredients and beat until smooth.  Cover with a transparent wrap and let stand in a warm place for two days.  This starter is usually somewhat more sour than other sourdoughs.  Put one cup of the starter in a crock and refrigerate.  To replenish:  add 1 1/2 cups whole wheat flour and 1 cup water.
