Beefy Shepard's pie

Ingredients

1 tbsp cooking oil
1 lb ground beef
1 med onion (chopped)
1 tsp salt
1/4 tsp pepper
3 cups mashed potatoes
1 cup shredded cheddar cheese

Directions

Preheat oven to 375*.  Heat oil in skillet, saute beef and onion until onion is transparent and beef has lost its redness.  Stir in salt and pepper.  Put meat mixture in 1 1/2 qt baking dish; spread potatoes on top.  Sprinkle with cheese; bake in pre-heated oven for 30 minutes or until cheese is melted and bubbling.
