Sweet Potato Pie |

1 cup sifted flour |

Sift flour, baking powder, and salt into a bowl. Add shortening and cut into the flour with a pastry blender or two knives, until the consistency of coarse sand. Add the water, drop by drop, tossing lightly with a fork until a ball of dough is formed. Chill for at least 1 hour. Roll out the dough on a lightly floured surface and line an unbuttered 11-inch pie plate with it. Place the pie plate in the refrigerator while preparing the filling. Preheat oven to 300*. Cream butter and sugar until light and fluffy. Gradually add the sweet potatoes and milk alternately, beating well. Add the ginger and orange rind and beat well. Pour into prepared pie plate. Bake at 300* until delicately browned, about 45 minutes. Serve hot with whipped cream on the side!! |
