RAW APPLE CAKE

 

6 medium apples (peeled, cored & sliced)             1 t cinnamon

 

1 cup oil (canola)                                                       1 t cloves

 

1 ½ cups sugar                                                           1 t baking soda

 

3 eggs                                                                         ¼ t salt

 

1 t vanilla                                                                   2 cups flour

 

1 cup chopped walnuts

 

Preheat oven to 350. Mix in large bowl with spoon: sugar, oil, eggs & vanilla. Add dry ingredients: salt, soda, cinnamon, cloves & flour. Mix well. Fold in apples and nuts. Pour thick batter into 9 X 13 lightly greased pan. Bake 35-45 minutes until a toothpick inserted in the center comes out clean. Sprinkle with powdered sugar when cool.

 

Hints: Tart baking apples (Northern Spy or Granny Smith) avoid mushiness. No mixer is needed.
