Chicken Recipe

 

Ingredients:           1 –cut up chicken              1 – cup cooking oil

                             2 – cups flour                  1 – cup yellow corn meal

                             3 – eggs                           1 – can evaporated milk

                             1 – heaping tablespoon “Pappy’s” seasoning or your

                                  favorite BBQ flavor seasoning

                             Salt and pepper to taste

                             Large skillet

 

Preparation:           In one large bowl mix flour, corn meal, flavor seasoning,

                             salt and pepper. In another bowl mix eggs and evaporated

                             milk and whisk briskly. Place the skillet on high heat and

                             add oil and butter. Set dry ingredients bowl next to fry

                             pan and wet ingredients bowl next to dry.

                             Prepare the meat by rinsing then patting dry and placing

                             At the end of the line.

                             Stir or ladle the oil and melted butter every 30 seconds

                             Until the mixture is almost smoking hot.

 

Cooking:                 Dip a piece of meat in the milk and eggs. Then dip it in

                             the dry mix and place it carefully in the skillet. It should

                             instantly sizzle. Repeat quickly until skillet is full. Brown

                             for several minutes on each side depending on the size of

                             the meat. Keep heat on high. Once golden brown on both

                             sides remove from pan and repeat until pan is full again.

 

                             Should serve six to eight.
