Apritada

(This is applicable to Pork or Fish) 

For Starter.

1/2 kg. pork 

6 cloves garlic, 

2 red medium onions 

2 tasty bread medium dissolved in 1 & 1/2 cup water. 

1/2 tspoon black pepper. 

1 tspoon (achuete) for color or use 

1 tbspoon tomato paste in place of achuete. 

1 - 2 tbspoon sugar (as per your taste) 

2 medium size sweet potato (kamote) medium fried. 

salt to taste. 

Sauté' to golden brown garlic to 3 tbspoon cooking oil, add onion, add black pepper, add meat then mix well cover till meat is almost fried. Meanwhile, mix water with achuete (or tomato paste), sugar then pour to meat let boil till 80 percent cook, add dissolved bread crumbs and kamote simmer at slow heat till cook, Salt to taste.
