AMPALAYA CON KARNE  

 

(Usually 20 - 30 minutes this will be done. Serves about 2 to 4 persons.)

Select from these meat:

1/2 kg. Beef meat, tender one, OR Pork Meat, OR Chicken. (cut beef or pork into strip about 1/4 x    1-1/2 inch., chicken into bite size)

1 large or 2 pcs. medium Ampalaya (Bitter Vegetable), cut lengthwise into middle, then sliced about 1/4 inch. thick

6 cloves medium garlic, crushed and chopped.

2 medium red. onions.

4 table spoon fish sauce, or 1/2 teaspoon iodized salt.

2 table spoon cooking oil.

1/3 tspoon black pepper powder.

1-1/2 cup water.

 

To Cook.

Sauté, garlic close to golden brown, then followed by onion, when onion is 60 percent done, add black pepper, add the meat, then salt (or fish sauce), let simmer till almost dry, then add water, simmer till tender when 20 percent liquid is remaining add ampalaya (bitter). Then simmer to desired texture of ampalaya, 60 percent cook is good for ampalaya.

Serve with plain white rice.
