BEEF MECHADO... | ||||||||||
1/2 kg. Beef, cut into strips about 1/4 thick, x 1 inch with x 1-1/2 inch length. 1/2 kg. Liver same cut. 4 pcs. medium hotdogs or beef franks same cut. 1 medium potato, same cut as meat (fried) 1 medium carrots, same cut as meat 1 green bell pepper, cut to strip 1/3 tspoon black pepper. 6 cloves garlic crushed and finely chopped. 1 medium red onion cut to fine strips. Boil about 15 minutes, meat and liver with 1 cup water, with salt and black pepper. Drain, then keep the stock. Saute garlic to golden brown, then onion when onion is clear, add meat and liver stir and simmer for about 15 minutes. Add tomato sauce, stir, and simmer for another 10 minutes, add the stock, salt to taste, simmer to medium heat till sauce becomes thick, then add carrots, potato and green pepper. See if carrots and pepper are done, remove from flame. Serve warm. |
