PORK ADOBO by mekeni_chef
Prepare.
1/2-1 kg pork meat with fat and skin. cut into cubes 1 1/2 x 1 inch.
1/3 cup vinegar (Datu Puti)
1/3 cup soy sauce (Silver Swan)
1/3 cup water,
2-3 pcs siling labuyo
10 pcs Black peper crushed 6 cloves garlic,
2 medium onion, cut to ring shape.
1 1/2 tbspoon white sugar
Mix vinegar, soy sauce and water, in a plastic bowl (Do not Used aluminum materials, it has chemical reactions on the ascorbic acid of vinegar it will create unwanted taste). add black pepper and garlic and sugar marinade pork meat for 1 hour Leave behind onion.  Then cook in an stainless steel kettle, cook till all liquid almost evaporate 80 percent of it, when close to drying add onion till very few liquids remains.
That's it. Serve with hot rice. But I prefer COLD rice (Bahaw).
