1 Jigger = 1oz.-2oz. depending on the drink size and the Jigger size.

To chill a glass, set it in the fridge or freezer.  Glasses chilled in the freezer make for better presentation as they have a nice frost when removed.

Always serve drinks in super clean glasses.  Neveer touch the inside or lip of a glass.  Everything has an affect on the taste of the drink.

Always rinse your tools after every drink. Cross-contamination can ruin a great drink.

Always use fresh fruit for fruit drinks and fresh coffee in coffee drinks.

To layer a drink, turn a spoon upside down in the glass with the tip touching the edge.  Slowly and Carefully pour the liquid on the back of the spoon. These drinks are also known as Pousse drinks.

If drink ingredients are hard to mix, shake them.  If you don't have a shaker, blend it.

To strain a drink, place the strainer in the glass and slowly pour the drink into the new glass.  If you don't have a drink strainer, take a lid from something like a butter dish, cover the glass, leaving a small space for the liquid to flow through and pour.

Shaken drinks tend to be weaker than stirred drinks because shaking the drink encourages the ice to melt faster. 

Use big square ice cubes for drinks served straight up, crushed ice for most coctails.

If you don't have a refridgerator that makes crushed ice, wrap ice in a towel and attack with a hammer or a mallet.

To make sugar syrup, best known as simple syrup, simmer 2 cups of sugar in a pint of water.  Once it has cooled down, bottle it and store in your liquer cabinet.
