Aunt Gert's Peach cobbler/cake

This is a favorite to take to church dinners, family reunions and something you can "throw together" in case company pops in.
It is so simple: 

You will need the following:


*A 9x 13 baking dish

*one stick of butter
*one cup of flour (self rising)
You could use plain flour and then add salt and baking powder, sift with the flour; but it will be much faster to just use
self rising.
*one cup of sugar
*One half cup of milk
*one teaspoon of almond extract
*one large can of sliced peaches, with juice

In a preheated, 350 degree oven, melt the butter in the baking dish.  While the butter is melting, prepare the batter (i don't use an electric mixer for this, just a spoon), always add your flavoring last.  I don't know why this is a rule, but my Mom says so and I just do it. 

After you take the pan of melted butter out of the oven (be sure to use oven mits) pour the batter over the butter; then pour the peaches with juice over the top. While baking, the batter will rise above the peaches; unless you used plain flour and didn't add the baking powder and the salt.  Bake for about 30-40 minutes: all ovens vary.  My oven gets very hot, very fast; so this baby is done in 25 minutes in my oven.  Aunt Gert's oven must not have heated so well because she told me to let it bake an hour, I did this the first time, burned it and the dog wouldn't even touch it.

This is very good with vanilla ice cream.
