Homestyle Salmon Patties

  • 1 can Salmon (I use Honey Boy PINK)
  • 1 Egg (beaten)
  • Tablespoon or so Mayonaise
  • few dashes of Worchestershire sauce
  • Diced Onion - to taste
  • 1 to 2 Tablespoons of OLD BAY Seasoning
  • 1 to 2 Teaspoons Dill Weed - to taste - dried or fresh
  • 1 to 2 Teaspoons Parsley - to taste - dried or fresh

  • Cracker Crumbs
  • Instant Mashed Potato Flakes

  • Couple Tablespoons of butter mixed with couple tablespoons oil

 

  • Beat egg, mix in mayonaise, Worchestershire sauce and seasonings.   Add diced onion.  
  • Drain Salmon.  DO NOT worry about picking out bones or skin.  You can crush the bones with a fork if they annoy you!  
  • Gently fold Salmon into "wet" mixture.  Add some of the cracker crumbs and instant mashed potato flakes - keeping most back for coating.
  • Form into patties. One can Salmon makes four good sized patties.
  • Mix cracker crumbs and instant mashed potato flakes.
  • Coat both sides of patties with crumb mixture.
  • Let set up for a while.
  • Brown in butter oil combo in a medium hot skillet.  Turn gently to avoid breaking patties. Coating should create a nice crispy crust.

Notes:

  • My favorite crackers to make crumbs are RITZ crackers but, any cracker cumbs will do!

  • I use the Instant Mashed Potato Flake "trick" - not just with this recipe but with anything that gets "floured". I usually use plain instant mashed potato flakes although seasoned ones work just as well! They can be mixed in with the ingredients and/or added to the coating. Adds a nice lightness to the crispy crust. Also great in fish fry, on chicken, pork... anything that gets "floured" or "breaded"."  I also add Instant Mashed Potato Flakes to meatloaf and meatballs - they help hold together and add a lightness.

  • I sure hope you have OLD BAY Seasoning where you live. It is a McCormick Spice that comes out of Baltimore, MD. When I first moved to Texas, we couldn’t get it here and my Mom or one Sister or the others... would sent me a can every now and then with Christmas or Birthday presents! Now just about every store around here carries it! I use it in all kinds of other dishes too. It is great in Salmon patties, Fried Chicken, Fish, potatoes, and lots more!!!! And they recently came out with an Old Bay Seasoning with Lemon and Herbs that we've tried - it's pretty good.
