These dishes have been Christmas eve favorites in my family for as long as I can remember. Though most of my extended family has spread out or passed away the smell of Christmas cooking brings back wonderful memories, and Britts loves hearing the stories. |

Oyster Stew
2 cans oysters 1/4 c onion, chopped 2 cans carnation milk 2 T. butter 2 cups milk 1T Worchestershire sauce 4 slices velveeta cheese salt 1/2 c celery chopped pepper
Sautee oysters in butter with onion, celery, and worchestershire sauce. Add milk and cheese. Season to taste with salt and pepper. |

Loose meat hot beef or pork sandwhiches
Beef or Pork roasts..amount as needed Onion soup mix ( one package per roast used) (1 to 1 1/2 lbs per person) Water Salt and Pepper (to taste) 1 large onion
Place roasts in large roasting pan, large enough to cover meat aprrox 1/2 way with water. Sprinkle onion soup over EACH roast. Slice onions and layer on top of meat. Salt and pepper to taste. Bake in 350 degree oven, 2 hours for beef, 1 1/2 for pork. Remove from pan leaving drippings and water. Using two forks shred meat , if meat does not shread easily bake for another 30-40 minutes then try again. Once meat is shredded pour drippings in large enough crock pot to hold drippings and meat. Allow to cook 3-4 hours (if no crock pot available bake for another 1-1/2 hours, crock pot is preferable however) When meat is tender pour off drippings into colander to save pieces of onion , (drippings make great gravy)
Two ways to serve
BBQed
Add one jar of your favorite bbq sauce, we prefer Kraft thick and spicy brown sugar. Allow to heat through. Serve on buns
Plain meat
Serve on buns with ketchup, mustard and horseradish sauce (we like to save up extras from Arbys..Horsey sauce rocks! as does Arby's sauce)

3 M Taco Dip (Massive Monster Mouth-burn)
1 8oz package cream cheese 1 medium container sour cream 1 pkg taco seasoning 2 tomatoes 1 jar ortega medium taco sauce tortilla chips 1 cup shredded taco cheese mixture black olives ( mild or hot can also be used))
Place cream cheese, sour cream, taco seasoning and taco sauce in medium bowl. Mix using hand mixer until well blended and clump free. Spread on large plate. Cover with cheese, tomatoes and black olives. Chill well. Serve with chips. |

Crab and Shrimp Puff
1 medium pkg medium shrimp 1 small package co-jack cheese 1 stick butter (real butter preferable) 8 tbsp flour 4 cups milk salt and pepper to taste 1 package pepperidge farm puff shells or pillsbury grands biscuits
Shred crab flakes, cube cheese, wash and tail shrimp. Set aside.
Melt butter in large pan over medium heat, do not scorch. Add flour and mix into a paste. Add milk, mix until clumps disolve. Stir constantly until thick. Add seafood and cheese. Prepare pastry per package directions. Serve inside shells and around. |
