This wrist lock is often used in defense of a punch or stab to the stomach.

When the stab comes in, step slightly to the side and grab the wrist with both hands so that your thumbs are on their knuckles -------------------------------->

Then arc up and back, taking care to mind the knife if there is one, so that they are bent over backwards.

To finish, carry on with the arc and break their balance so that they fall down, then roll them onto their front by stepping over their head with first your left foot then the right and put on an arm lock.
This lock is often used in defense of a stab to the groin.

Block the stab with crossed hands with the back of the hand facing the attack.  Then turn your hands to grip the wrist and arc back and up so that they bend down and forwards.  Keep the arm straight and wrist bent upwards.

To finish, kick them in the face and them use the ko soto waza technique to take them to the floor.
This lock is used in denfense of a grip to the lapels.

Grip the attackers hand like so---------->
using your elbow as protection to your face in case they go to headbutt you.  Simply twist the wrist out and round and and bend forwards.

To finish, push the wrist down more so they go to the ground. 
Your thumb in the hollow and fingers wrap around the other side.

The arm lock kata is all 8 locks put together in a series.  The pattern goes; 1, 2, 3, 4, 4 (other shoulder) 1, 2, 5, 6, 7, 5, 8.  You're supposed to move smoothly between each one onto the next.  Here's an animation of the kata- it's not perfect but it shows roughly how it goes.

Block to the outside of a punch and circle your left arm over his shoulders and wrap around the neck, your knuckles should be resting on uke's jaw.Then simultaneously bend your knees, lean back slightly and drop your weight on to his neck. While your doing this, use your knuckles to lever his jaw round.
Block to the inside of a punch, then wrap your right arm round and over his head. This should bend him over and have your right hand resting under his jaw and his right temple resting under your floating rib.  From there place your other hand over your right cupping his jaw and rotate his jaw up towards your left shoulder in a circular motion.
Block a punch to the outside, make sure you step deep and get right behind uke. Right hand shoots across uke's jaw turning his head to the left, stop with knuckles on jaw, palm facing out. Place left hand palm to palm with right hand, with your left arm running down uke's back. Step back and push with left elbow into back and pull with right hand to arch back.

Step back and push right arm left to twist head even more and push forward with left hand.
Block to the outside of a punch so that you're right behind uke facing in same direction.  Drive both arms up and force his shoulders up.  Place you hands, hand over hand (DO NOT INTERLINK FINGERS) on uke's crown. Step back and push forward with hands.
Block a punch to the outside, make sure you step deep and get right behind uke. Right hand shoots across uke's jaw turning his head to the left. Put your left arm under their shoulder, grip your left elbow with your right hand and place your left hand just above the temple of the side of uke's head you can see.
Step back and push right arm left to twist head even more and push forward with left hand.
Headlock counters
If someone tries to stick you in a headlock there are ways to counter then

Either..
...poke them in the mastoids (the nerve points by the ears) with your left fingers.
... grip their chin from the side closest to you with your left hand and pull them backwards off you.
Wrap your right arm around their head and roll backwards so that you end upsitting on them.  From there you can either keep the choke hold or hit them a bit.
Before the lock comes on, grap the arm which comes over your shoulder first and throw them seio otoshi.

Crouch down before they can get their hands on your head then step to the side and  scoop both their legs from under them (Sukui nage)

(warning- I'm pants at arm lock 6 so this is probably wrong.  Its something along these lines though)
This lock is used when someone puts their hand on your shoulder.

First, with the hand opposite the shoulder they have grabbed, clamp their hand to yourself then wheel your other arm around so that their wrist is trapped under it.  This lock seems like nothing but it actually really hurts.
