In a bowl, combine the
yeast, 1 cup warm water, and sugar. Let prove. Stir in the flour, salt,
garlic, cheese, and remaining water. Mix well to make a soft dough. Lightly oil a bowl and place the dough in it. Let rise until doubled in bulk. Punch down and let rise again. Butter a 1-1/2 to 2 quart casserole or souffle dish,or use to 8 x 5 x 2 inch loaf pans. Place dough in pan(s) and let rise until doubled in bulk. Preheat oven to 400 degrees. Bake 30 minutes or until golden. Brush the loaf with butter and bake 5 minutes longer. Serve warm. Makes 1 round loaf or 2 standard loaves.
