Microwave Enchilada Casserole

1-1/2 lbs ground beef

1 medium onion, diced

2 cloves garlic, minced fine

1 pkg enchilada mix or 1 Tbsp chili pwdr

1 can (15 oz) tomato sauce

6 corn tortillas

2-1/2 cups grated cheddar cheese

1 cup chopped ripe olives (optional)

1-1/2 cups drained whole kernel corn

Crumble beef into casserole dish.  Add onion and garlic.  Cook 3 minutes in microwave on high.   Stir well.  Add enchilada seasoning, tomato sauce, olives, and corn.   Cook 3-1/2 minutes.  Stir well.  In a separate casserole dish, alternate layers of tortillas, meat sauce, and cheese.  Save 1/2 cup cheese for topping.   Cook in microwave 7 to 8 minutes.
