Mushroom Stuffing

12 Tbsp chopped onion

1 cup butter

16 cups dry bread cubes (approx 28 slices cut in 1/2 inch cubes)

1/2 cup celery (optional)

1 can (8 oz) mushrooms

1 tsp salt

1 tsp pepper

2 tsp poultry seasoning

1 tsp ground sage

8 to 16 Tbsp chicken broth

Cook onion and mushrooms in butter.  Combine with bread cubes and seasonings.  Toss with enough liquid to moisten to desired consistency.  Bake until crusty on top.

Makes 12 cups.
