Chile Rellenos Bake

2 cans (4 oz ea) whole green chile peppers

6 oz Monterey jack cheese

4 beaten eggs

1/3 cup skim milk

1/2 cup all-purpose flour

1/2 tsp baking powder

3/4 cup shredded cheddar cheese

1/2 tsp salt

Drain peppers; halve lengthwiseand remove seeds.  Cut jack cheese into stripsto fit inside peppers.   Wrap each pepper around a strip of cheese; place in greased 10 x 6 x 2 baking dish.   Combine eggs and milk; beat in flour, baking powder, and salt until smooth.   Pour over peppers.  Sprinkle cheddar cheese on top.  Bake in 350 degree oven for 30 minutes.

Serve with refried beans and spanish rice.

Makes 6 servings.
