Minty's Lite Chicken Roll

Not many at the club would realise, but club president Anthony "Minty" Campbell is actually pretty health concious.

A few years ago he and his lovely wife, Helen, were good enough to put me up at their house for a week. Helen cooked me dinner and Minty made my lunch. It was a great arangement and in  hindsight I'm not sure why I left after the first week - actually, I think they might have asked me to leave!

In an attempt to honor their fantastic hospitality I have outlined one of the lunches Minty prepared for himself whilst I was there.

Ingredients

-1 whole barbequed chicken
- 2 wholegrain rolls
- salt reduced margarine

Instructions

This meal is both easy and convenient. It's easy because it is pretty basic with few ingredients. It is convenient because Minty used to prepare it the night before, for his lunch the next day

The idea of  this meal is to keep it lite and good for you. Minty therfore decided that wholegrain or multigrain rolls were best.

He applied the same theory when deciding to go with the salt reduced marg.

The process for combining the ingredients is pretty straightforward but to keep the meal as lite as possible Minty would first remove the oily skin from the barbequed chicken.

He would then dispose of the chicken skin by eating it before combining the remaining ingredients, wrapping them in cling wrap and placing the rolls in the fridge for the next day.
