Texas Style
Barbecued Spare Ribs

This is one version of Texas Style Barbecued Spare Ribs.




1 rack of Pork Spare Ribs (2 - 3 lbs)

1/4 cup Onion (very finely chopped)
1 tsp Garlic (finely minced)
4 Tbls Tomato Paste
1 Tbl Vegetable Oil
1 Tbl Orange Juice
1 Tbl Red Wine Vinegar
1 Tbl Brown Sugar
1 tsp Honey
1/2 tsp prepared Mustard
1/2 tsp Salt
1/4 tsp Worcestershire Sauce
1/4 tsp ground Black Pepper
1/8 tsp ground Cayenne Pepper




1. Pre-heat oven to 450º

2. Place ribs on a wire rack, meat side up.
       Place the wire rack over a roasting pan.
       Put a inch or so of water in the roasting pan.
              (The water prevents the dripings from burning)
       Place into pre-heated oven, roast 20 minutes.

3. Meanwhile, prepare sauce.
       Mix all of the ingredients in a saucepan.
       Bring to boil, simmer 5 minutes, set aside.

4. After 20 minutes, turn ribs over.
       Spread 1/2 of the sauce on the ribs.
       Reduce heat to 350º.
       Roast another 20 minutes.

5. After second 20 minutes, turn ribs again.
       Spread remainder of the sauce on the ribs.
       Roast 20 - 30 minutes (a total of 60 - 70 minutes)
       The sauce will be bubbling and dark reddish-brown.

6. Remove ribs from oven, slice through to seperate.
       Serve
