Kheera ka Raita
Cucumber with Yoghurt

A refreshing Yoghurt dip,
served as a side dish.




1 pint Plain Yoghurt
2 Kerby Cucumbers (peeled & grated)
2 Tbls Fresh Mint (chopped)
1/2 tsp ground Cumin
1/8 - 1/4 tsp ground Dried Red Chili Pepper OR ground Cayenne
1/2 tsp Salt
1/8 tsp Sugar [OPTIONAL]
pinch ground Black Pepper





1. Place yogurt in cheesecloth hung over a bowl for several hours.
          The whey will drain leaving a much thicker Yoghurt cheese.

2. Mix drained Yoghurt with ALL other ingredients.

3. Refrigerate until ready to eat.
