Jalfraizi Murghi
Chicken with
  Tomato, Pepper and Onion

This Pakistani Chicken dish can be as hot or as mild
as you wish to make it. The most important thing
is to cook the chicken until it is extremely tender.
Then add the other vegetables at the end so they will
remain a bit firm, providing a contrast of textures.

Serve this dish with Basmati Rice
and Nan bread for a complete meal.




PART 1

Whole Chicken (cut-up w/bones (10-12 pieces))
       OR 2 lb chicken meat (cut into 1" bite-size cubes)

4 tbls Ghee OR Oil
1 cup Onion (finely chopped)

1 tsp Garlic (minced)
1 tsp Ginger (grated)
1/4 tsp ground Turmeric
1 tsp groung Coriander
1/2 cup Tomato (chopped, peeled & seeded)
1/2 tsp Red Chili Flakes

1 tsp salt
4 whole dried Red Chilis

PART 2

12 tiny Onions (cipollini)
       OR 2 medium Onions (quartered)
8 Roma Tomatoes quartered OR 4 large Tomatoes cut in wedges
3 Bell Peppers (Green, Red, Yellow) seeded (cut in 2" chunks)
1 tsp Garam Masala




PART 1

1. Heat Ghee or Oil, add Onion, saute until it begins to color.
2. Add Garlic, Ginger, Turmeric, ground Coriander, Tomato and Chili Flakes.

3. IF USING CHICKEN PARTS WITH BONES:
          -Lay Chicken pieces on top of spiced onion-tomato base.
          -Add Salt, tuck whole dried Red Chilis all around
          -Cover, lower heat, Simmer 35 min.
          -After 30 min, open cover, turn chicken, recover, simmer 25 min.

    IF USING BITE SIZE CHICKEN PIECES
          -Lower heat, cover pan, simmer onion-tomato base 5 min.
          -Add Dark meat Chicken pieces, whole dried Red Chilis,
                    half the salt, re-cover, simmer 20 min more.
          -Add White meat, remaining of salt, re-cover, simmer 25 more.

PART 2

4. Heat a seperate pan, take 3 tbls of the oil from chicken pan.
5. On medium-high heat, add tiny Onions OR quartered Onions,
          saute 5-10 minutes until Onions turn golden
6. Lower heat, add Garam Masala, stir, simmer without cover 5 min.
7. Add Bell Pepper pieces & Tomatoes, stir, simmer without cover 2 min.

COMBINE PART 1 & PART 2

7. Pour Onions, Bell Peppers & Tomatoes into pan with Chicken.
8. Mix gently together, cover, let sit 5 min to blend flavors.
9. Serve
          (The seperate cooking will create a contrast between
                    the spicy, hot Chicken and
                    the sweet, slightly crunchy vegetables)
