Kluski s Kapusta
Noodles and Cabbage
     with Onions and Caraway Seed

This is a classic Polish side dish.
Serve it with Meat or Chicken.




1 - 2 large Onions (cut in half, sliced crosswise 1/4" thick)
3 Tbls Butter OR oil

1 medium Cabbage (cut in half, sliced crosswise 1/4" thick)

2 Tsp ground Caraway seed OR
          3 tsp whole Caraway seed
1/2 - 1 tsp Salt
1/4 - 1/2 tsp ground Black Pepper

1 lb Egg Noodles (ribbons, bow ties or your favorite shape)

1 cup Sour Cream [optional]




1. Heat a large pan, add Butter OR Oil,
          add Onions, saute on medium high heat until golden.
2. Add Cabbage, Caraway seed, Salt and Black Pepper
          Toss to thoroughly distribute, bringing Onion up from the bottom.
3. Cover, lower heat, cook about 15 - 20 minutes until Cabbage is soft.
          Stir once or twice during this time.
                    (There is no need to add liquid.
                    (The Cabbage will "sweat", thereby steaming itself.

4. Meanwhile, prepare a pot of boiling water.
          Add Egg Noodles, cook according to directions.
                    (they usually take 8 - 12 minutes.

5. When the Egg Noodles are done, drain them,
          add them to the Cabbage (which should be soft by now)
6. Toss the Egg Noodles and Cabbage together.
7. Add the [optional] Sour Cream
          (you can either mix the Sour Cream into the Noodles and Cabbage,
          (OR serve the Noodles and Cabbage with dollops of Sour Cream on top.
