LADDU Chick Pea - Walnut Fudge A wonderfully delicious Nut Fudge made with Chick Pea flour. The combination of the beans and the nuts actually provides complete protein. A great ending to any Indian meal. 3/4 cup unsalted Butter 2 cups Besan (Chickpea Flour) (sifted) 1/4 cup finely chopped Walnuts OR Pecans 1/4 tsp ground Nutmeg 1 cup Confectioner's Sugar 1. Melt butter in sauce pan over low heat. 2. Add sifted Besan (Chickpea Flour), Walnuts OR Pecans & Nutmeg. 3. Cook over low heat, stirring constantly, 15 - 20 minutes until mixture becomes deep golden brown and has a loose consistancy. 4. Remove from heat, stir in Sugar FOR LADDU BALLS 5. Spread mixture onto dish. 6. While still warm but cool enough to handle, roll 1" balls. 7. Refrigerate balls until Laddu becomes firm. 8. Serve balls cold OR allow to re-warm to room temperature. FOR LADDU SQUARES 5. Spread mixture evenly onto a tray, about 1/2" thick. 6. Allow to cool to room temperature, slice into 1" squares. 7. Refrigerate squares until Laddu becomes firm. 8. Serve squares cold OR allow to re-warm to room temperature. |
