MINT CHUTNEY

Serve this at the beginning of an Indian meal as a dip for Pappadams.
Leave it on the table throughout the meal and continue to enjoy!.




1 cup fresh Mint (very finely chopped)
1/2 cup fresh Coriander (Celantro) (very finely chopped)
5 cloves of Garlic (mashed)
6 fresh Green Chilis OR Jalpenos (with OR without seeds)
1 Tbl Sugar
3 Tbls fresh Lime Juice OR Lemon Juice
1/2 tsp Salt

1/4 grated Coconut

several Tbls cold Water




1. Mix Mint, Coriander (Celantro), Garlic, Green Chili,
          Sugar, Lime OR Lemon Juice & Salt.

2. Process into a smooth paste.

3. Add Coconut, mix well.

4. Mix in a few tablespoons of cold Water to get the desired consistancy.
          It should be not too thick and not too runny.

5. Use within 3 - 4 days.
