Zucchini in Salsa
Zucchini in Tomato Sauce




1 1/2 lbs whole fresh Zucchini
1 Tbl Coarse Salt

3 Tbls Olive Oil
1 cup Onion (finely chopped)
1/2 cup Red Bell Pepper (diced)
1 tsp fresh Garlic (finely minced)
6 Black Olives (pitted, cut in quarters)

1/8 tsp ground Black Pepper
1/2 tsp dried Oregano

2 Tbls Tomato Paste dissolved in 1 cup Water
[ OPTIONAL 1/4 tsp Sugar]

additional Salt if necessary




1.  Slice Zucchini lengthwise making 4 long pieces.
         Then slice crosswise making 1/4" pieces.

2.  Place Zucchini in a colander and sprinkle with Coarse Salt.
         Zucchini will give off a small amount of bitter liquid.
         Allow to drain about 20 minutes,
         Then rinse under cold running water.
         Set aside.
                   [Salting and draining is not absolutely necessary.
                   [However, you may want to add optional Sugar to counteract
                   [the slight bitterness which Zucchini sometimes has.

3.  Meanwhile, heat a medium sauce pot over medium-high heat,
         Add  Olive Oil,

4.  Add Onion, saute about 5 - 8 minutes or until golden.

5.  Add Red Bell Pepper, Olives & Garlic, saute 1 more minute.
         [Do NOT burn Garlic]

6.  Add Black Pepper & Oregano

7.  Add Zucchini pieces & Tomato Paste dissolved in 1 cup of water.
         [Add OPTIONAL Sugar]
         Mix well to distribute all ingredients.

8.  Bring to boil, cover partly, lower heat, simmer about 25 minutes,
         or until the Zucchini appears translucent.
         Add additional Salt if necessary.

9. Serve
