Japanese Style Herb Cooking

Tofu is a wonderful food that our ancestore created.  It is made from soybean and from this soybean, the famous soy sauce and miso are also made.
   These are all traditional Japanese food and I had never thought of eating them with herbs.  Now, that I grow my own herbs in the veranda, it was quite natural for me to adopt herbs into Japanese style dishes.
   The recipes below are my original and I'm introducing the ones that my husband, parents and friends liked.  I really hope it suits your taste.

::::HerTu TOFU::::

1 pack tofu  (50grams or 1 3/4ounces)
1 canned tuna
1 ounce chedder cheese, cut in 1/2 cubes
2 tablespoons mayonaise
salt and pepper, to taste
1 teaspoon finely minced fresh italian parsely
1 teaspoon finely minced fresh sweet marjoram
1 teaspoon finely minced fresh sweet basil
1 teaspoon finely minced fresh chives


1.  Put tofu in a bowl and put it in the microwave oven for 2 min.
2.  Take it out, crash it with a spoon and drain off water.
3.  2 more min. in the microwave oven.
4.  Crash tofu again and let tofu's water drain for 10 min. in a strainer.
5.  Mix canned tuna, herbs, cheese, mayonaise, salt and pepper.
6. Transfer tofu to a plate pour #5 on tofu. 
Serve!!

::::Meetom TOFU::::

1 pack tofu (50 grams or 1 3/4 ounces)
2 fresh tomatoes
1/4 cup chopped onion
4 ounces minced meet, pork or chicken
1/2 teaspoons cayenne pepper
1 chopped paprika
1 clove garlic, minced
1 teaspoon dry thyme
1 teaspoon dry french tarragon
1 teaspoon dry sweet marjoram
1 teaspoon dry oregano
olive oil
salt and pepper, to taste


1.  Wrap tofu with 4 sheets of paper towel and let them absorb water.
2.  In a large pan, warm olive oil. Add garlic, french tarragon and thyme, heat for 2 min.
3.  Add minced meet, fry over medium heat, stirr occasionally untill meet is cooked.
4.  Take out meet and in a same pan, add olive oil and chopped onion, saute for 2 min. Add tomatoes and simmer over low heat for 3 min.
5.  Add cayenne pepper, paprika, oregano and marjoram.
6.  Put meet into the pan, add salt and pepper.  Simmer over medium heat for 3min.
7.  Unwrap paper towels, cut tofu int 1 inch cubes.  Add them into #6.  Simmer over medium heat for 2 min. 
Serve!!
