Curried Mushroom Rolls
Curried Mushroom Rolls
- 24-28 slices of spongy white bread
- 5 Tablespoons butter
- 1/2 cup sweet onion, finely chopped
- 4 Tablespoons sherry
- 1 lb. mushrooms, finely chopped
- 1-2 teaspoons curry powder - to taste
- salt and pepper - to taste
- Additional melted butter
Instructions:
Preheat oven to 425F. Roll out the slices of bread very thin, and remove the crusts. In a large skillet, melt the butter and add the onions and sherry, cooking until tender. Add mushrooms and seasonings and cook until softened. Remove from heat and allow to cool a bit. Mixture will be juicy. Put about a tablespoon on each slice of bread and roll up, jelly roll style, and secure with one or two toothpicks and place on a cookie sheet. Brush melted butter on the tops and bake in oven about ten minutes, until golden.
