Double Cheese Spread with Zesty Italian Salsa




Instructions:
1. Combine the ricotta cheese and goat cheese in food processor. Process until completely blended and softened. Mound in small serving bowl, cover, and refrigerate.
2. To prepare the salsa: Pour boiling water over the sundried tomatoes and let soften for 15 minutes. Drain and set aside.
3. Finely chop the shallot and garlic cloves in the food processor. Add the drained sundried tomatoes, fresh tomatoes and basil. Pulse on and off until very finely chopped. Add the olive oil, salt and pepper, and process just enough to combine. Taste for seasoning. Refrigerate.
5. When ready to serve, mound the cheese in a medium serving bowl. Spoon the salsa around the cheese, leaving the center uncovered. Garnish with a few basil leaves. Serve with bread or crackers.
This is quite a tasty starter for a barbecue or as a party snack.
