Banana Chocolate Chip Bread #2
- 1/2 cup soft butter (do not use margarine)
- 1 teaspoon vanilla
- 3/4 cup sugar
- 2 eggs (at room temperature)
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup ripe to semi over ripe mashed bananas (about 3 medium)
- One 6-ounce package chocolate chips
Instructions:
In large bowl, cream butter, vanilla, and sugar until light and fluffy. Beat in eggs. In a separate bowl, sift together flour, salt, and baking soda. Blend in butter/egg mixture alternately with mashed bananas; stir in chocolate chips. Put into muffin tin or 9 x 5 x
3-inch loaf pan. Bake in 350-degree oven for 50 to 55 minutes or until toothpick comes out clean.
